Scallops in Tomato Sauce Recipe

INGREDIENTS
2 tsp. olive oil
1/4 cup finely chopped green onion
1 tsp. finely chopped garlic
16 sea scallops
1 1/2 cups chopped tomatoes
1 cup tomato sauce
1/4 tsp. salt (or to taste)
1/4 tsp. fresh ground black pepper
1/4 tsp. red pepper flakes (or to taste)
1 tsp. Italian seasoning

DIRECTIONS
- Heat the olive oil in large skillet.
- Add green onion and garlic; sauté 1 minute.
- Add scallops; sauté for 2 minutes on each side. Remove and keep warm.
- To the skillet:
- Add chopped tomato, tomato sauce and seasonings.
- Bring to a boil, and simmer while stirring for 1 minute.
- Add scallops and heat until heated through.
- Serve over angle hair pasta.
- Garnish with chopped fresh Italian parsley and grated Parmesan cheese.
- Note: Recipe can easily be doubled.
