Cherry Apple Salad Recipe

“This recipe is great when served with any grilled meat.”

INGREDIENTS
2 tbsp. olive oil
2 tbsp. apple cider vinegar
2 tbsp. minced shallot
1 tbsp. honey
Heaping 1/2 cup dried tart cherries
6 cups mixed salad greens
1 medium Gala apple, cored, thinly sliced |

DIRECTIONS
Whisk the first 4 ingredients in small bowl to blend.
Season the dressing to taste with salt and pepper.
Stir in dried cherries.
Toss mixed salad green and apple slices in large bowl.
Add cherry dressing and toss to coat.
Divide among 4 plates; sprinkle freshly ground black pepper.
Serve immediately.
