Tomato-and-Mozzarella Pitas Recipe

INGREDIENTS

   *4 medium ripe unpeeled tomatoes cut into 24-1/4-inch slices
   *5 ounces fresh mozzarella cheese — cut into 12 slices
   *1/4 cup chopped fresh basil
   *1/2 cup red wine vinegar
   *1 teaspoon grated lemon rind
   *1/4 teaspoon pepper
   *1/4 teaspoon salt
   *3 large cloves garlic — minced
   *6 pita bread rounds — (6-inch)
   *6 leaf lettuce leaves

DIRECTIONS

  • In a shallow dish, place the tomato and cheese slices, forming a single layer. Mix the basil with vinegar, lemon rind, pepper, salt and garlic. Blend well. Drizzle this mixture on top of the slices of tomato and cheese. Put cover and refrigerate for an hour.
  • Open the top half of the pita bread round. Place a lettuce leaf. Fill the bread with 4 slices of tomato and 2 cheese slices for each.

Tuna and Sundried Tomato Wrap Recipe

INGREDIENTS

   *2 cans (6 oz each) chunk light tuna in water, drained
   *1/4 cup minced sun-dried tomatoes
   *3 tbsp lowfat mayonnaise
   *2 tbsp chopped fresh parsley
   *1 tbsp capers, drained and rinsed
   *2 tsp stone-ground or Dijon mustard
   *4 small (8-inch) whole-wheat tortillas
   *4 leaves red leaf lettuce

DIRECTIONS

  • Blend the tuna with tomatoes, mayo, parsley, capers, salt and pepper. Mix well. Ladle about half teaspoon of mustard onto each tortilla. Place a lettuce leaf on top and spread ¼ of the tuna mixture reaching towards the edges. Roll and enjoy!

INGREDIENTS

   *4 plain bagels
   *4 ounces light cream cheese
   *1 tomato, thinly sliced
   *1/2 medium cucumber, thinly sliced
   *4 thin slices red onion

DIRECTIONS

  • Distribute the cream cheese over the cut portions of the bagels. Place the tomato onto the bottom halves along with cucumber and red onion. Put the top of the bagel to cover and serve.

White Tuna Pita Recipe

INGREDIENTS

   *2 cans (12 oz total) chunk white tuna, drained
   *1/4 cup plain nonfat yogurt
   *1/4 cup nonfat mayonnaise
   *2 tablespoons finely chopped onion
   *1 teaspoon dry basil
   *1/2 teaspoon garlic powder
   *1/4 teaspoon black pepper
   *1 tomato, sliced
   *1/2 cup cucumber slices
   *2 pita bread rounds

DIRECTIONS

  • Mix the tuna well with yogurt, mayonnaise and seasonings
  • Cut the pita bread in two and split to create pockets. Fill it with tomato, cucumber and tuna mixture. Serve.

INGREDIENTS

1 whole wheat or low-fat tortilla, such as La Tortilla 99% Fat Free Burrito Size Flour Tortilla
1 tbsp light cream cheese
1/8 of an avocado, mashed
2 tbsp feta cheese
¼ C carrot, shredded
¼ C alfalfa sprouts
¼ cup red cabbage, shredded
¼ C green leaf lettuce, shredded
¼ C tomatoes, diced
¼ C cucumbers, diced
black pepper and garlic powder to taste

DIRECTIONS

  • Spread cream cheese and avocado over tortilla and sprinkle with feta cheese.
  • Sprinkle the remaining ingredients on the tortilla and roll up.
  • Serve with fruit or non-fat light yogurt.
  • Options: Use your imagination and play around with ingredients!
  • Try adding chopped spinach, diced celery, chopped red onion, bell pepper slices or sliced
