Deli Coleslaw Recipe

INGREDIENTS
6 – 7 cups green cabbage, cored, shredded
6 – 7 cups red cabbage, cored, shredded
Salt
2 teaspoons caraway seeds
1/2 cup low fat mayonnaise (we used Low Fat Hellmans)
2 tbsp. white vinegar
1 tsp. dijon-style mustard
1 tsp. sugar
Fresh ground pepper
2 carrots, peeled and grated
1 small sweet onion, minced |

DIRECTIONS
Toss the cabbage with 1 teaspoons salt and let sit in a colander for at least 1 to 4 hours.
Toast the caraway seeds in a small skillet over medium heat until fragrant, about 3 minutes.
Rinse the cabbage and pat dry with paper towels.
Whisk the toasted caraway seeds, mayonnaise, vinegar, mustard, sugar, and 1/4 teaspoons pepper together in a large bowl.
Add the cabbage, carrots, and onion and toss.
Chill for at least 1 hour before serving.
Season this with salt and pepper to taste.
NOTE: Use celery seeds, if you do not like caraway. Also you can use all green or all red cabbage.

Bell Pepper & Cabbage Slaw Recipe

INGREDIENTS
3 cups finely shredded cabbage
1/4 cup yellow bell pepper, finely chopped
1/4 cup red bell pepper, finely chopped
1/4 cup orange bell pepper, finely chopped
1 tsp. salt
2 tbsp. granulated sugar or sugar substitute if desired
1 tsp. celery seed
1/2 cup white wine or rice vinegar |

DIRECTIONS
- Dissolve the sugar and salt in the vinegar and pour over the cabbage and peppers.
- Add celery seed, mix and adjust seasonings to taste.

Purple Slaw Recipe

INGREDIENTS
1/2 medium head red cabbage, finely shredded
1/4 cup finely minced white sweet onion, vidalia
2 sweet apples, peeled, cored and finely diced
1/2 cup low fat mayonnaise
1/2 cup plain low fat yogurt
1/4 to 1/2 teaspoon salt
1/8 tsp. pepper
2 t tsp. sugar
2 tbsp. lemon juice
2 tbsp. 2% milk |

DIRECTIONS
Toss together the cabbage, onion, and apples in a large serving bowl.
In a small bowl, whisk together the mayonnaise, salt, pepper, sugar, lemon juice, and milk.
Pour dressing over the cabbage mixture, and toss to coat.
Chill until time to serve.

Mandarin Orange Slaw Recipe

INGREDIENTS
2 small apple, cored and chopped
2 medium carrots, shredded
2 tbsp. granulated sugar
2 tbsp. orange juice
2 tbsp. lemon juice
1/2 cup raisins |

DIRECTIONS
- Core and chop apples and shred peeled carrots.
- Place in bowl and add orange juice, lemon juice, sugar and raisins.
- Mix together and chill for 20 minutes.
- Serve on a bed of salad greens.

Fruity Red Cabbage Slaw Recipe

INGREDIENTS
5 cups thinly sliced red cabbage (about 1 1/2 pounds)
1/2 cup dried cranberries
1/3 cup rice vinegar
1/3 cup sugar
2 tbsp. white wine vinegar
2 tsp. olive oil
3/4 tsp. salt
1/2 tsp. freshly ground black pepper
2 1/4 cups thinly sliced and juillined Granny Smith apple
1/4 cup chopped pecans, toasted |

DIRECTIONS
- Combine cabbage and cranberries in a large bowl.
- Combine vinegar and next 5 ingredients (vinegar through pepper), stirring with a whisk; drizzle over cabbage mixture, tossing gently to coat.
- Cover and chill for 2 hours.
- Add apple, and toss well to combine.
- Sprinkle with pecans.

Texas Slaw Recipe

INGREDIENTS
1/2 cup sugar *
1/2 cup rice vinegar
3 tbsp. vegetable oil
8 cups coarsely shredded green cabbage (about 1/2 large head)
1 cup thinly sliced red bell pepper
1 cup thinly sliced green bell pepper
1 medium onion, thinly sliced
1 carrot, coarsely shredded |

DIRECTIONS
- Whisk sugar, vinegar, and oil to blend in large bowl.
- Add remaining ingredients and toss to combine.
- Season to taste with salt and pepper.
- Cover tightly and refrigerate at least 4 hours, tossing occasionally. (Can be prepared 2 days ahead. Keep refrigerated.)
- * Splenda® or some other sugar substitute can be used to cut 25 calories per serving.

1/2 cup chopped celery
2 tbsp. chopped walnuts
2 tbsp. golden raisins
2 tbsp. apple juice
1/4 to 1/2 tsp. cinnamon
1 tbsp. honey
1/2 cup nonfat plain yogurt Combine cabbage, apple, celery, walnuts and raisins. |

- Combine apple juice, yogurt, honey and cinnamon in a small bowl.
- Pour mixture over cabbage mixture and toss. Chill.
