Pear Sauce Recipe

INGREDIENTS
6 cups pared, cored and cubed Pears, any variety
1/4 cup water
2 Tbsp sugar
1 teaspoon lemon juice
Touch of nutmeg |
DIRECTIONS
- Combine all ingredients in 2-quart microwave-safe measure or bowl.
- Cover and microwave on high (100%) 6 minutes.
- Stir pear mixture; rotate dish one-quarter turn and microwave at high for 6 to 8 minutes longer or until tender.
- Puree in blender or food processor.

Tomato Basil Pasta Sauce Recipe

|
INGREDIENTS
2 tbsp olive oil
1 red onion, chopped
1 zucchini, diced
1 carrot, diced
4 garlic cloves, chopped
4 Roma tomatoes, seeded and diced
1 28-ounce can crushed tomatoes
1 bay leaf
1 rosemary sprig
15 basil leaves, chopped
Black pepper to taste |
DIRECTIONS
- Heat oil in a large skillet over medium heat.
- Add the onion, zucchini and carrot and sauté for 8 minutes.
- Add the garlic and sauté for about 1 minute.
- Add the tomatoes, bay leaf, black pepper and rosemary.
- Cook, uncovered for 15-20 minutes.
- Remove the bay leaf and rosemary sprig.
- Add the basil and add more seasonings if desired.
- Serve over cooked whole wheat pasta or use as a sauce for chicken.

INGREDIENTS
2 heads roasted garlic
2 tablespoons Dijon mustard
1.5-2 tablespoons honey
3 tablespoons cider vinegar
1/4 cup apple juice
1/4 tsp salt
Ground pepper to taste |
DIRECTIONS
- Squeeze garlic pulp from the roasted heads into a blender.
- Add the remaining ingredients and puree until smooth and creamy.
- Note: This can keep for 4 days (covered) in the refrigerator.

2 teaspoons lemon juice
1/4 teaspoon Worcestershire sauce

- Mix together in a blender until smooth.
- Yield: about 1 cup. Serving Size: 2 tablespoons.

2-1/2 tablespoons ketchup
2 tablespoons water
1 1/2 tablespoons cider vinegar
1 tablespoon mayonnaise
1 clove garlic, crushed
1/2 teaspoon sugar
Black pepper to taste

DIRECTIONS
- Put all ingredients in a small bowl.
- Mix together by using a spoon or fork.
- Store in the refrigerator in a covered container until ready to use.

INGREDIENTS
2/3 cup plain low fat yogurt
1/3 cup apple cider vinegar
2 tablespoons olive oil
1 tablespoon mustard (Dijon works well)
1 tablespoon lemon juice
1 large of two small cloves garlic, pressed
1 tablespoon soy sauce
1/4 teaspoon dried dill weed

DIRECTIONS
- Put all ingredients into a jar with a tight-fitting lid.
- Shake jar to blend ingredients.
- Store in the refrigerator between uses.

1 tbsp minced green onion
1 tsp crushed garlic
1 tbsp fresh lime juice
salt and black pepper to taste

DIRECTIONS
- Whisk the above ingredients in a small bowl.
- Set aside for at least an hour to allow the flavors to meld.
- Will keep for 3-4 days in a tightly covered container in refrigerator.
- Note: Works well on tostadas, potatoes, burritos or grilled veggies

INGREDIENTS
¾ cup sugar
1/3 cup unsweetened cocoa powder
4 tsp cornstarch
2/3 cup evaporated skim milk
1 tsp vanilla or rum extract
|
DIRECTIONS
- Mix together sugar, cocoa powder and cornstarch.
- Add mixture and evaporated milk to a small saucepan.
- Heat over medium heat, stirring constantly until sauce is thick and bubbly.
- Cook for 2 more minutes, remove from heat and stir in vanilla.
- Dip desired fruit into sauce and refrigerate until chocolate sets.
