Frozen Mango Yogurt Recipe

“Get yourself a healthy treat with something spicy, right at your own home!”

INGREDIENTS
2-3 Tbsp honey
2 tsp chopped fresh ginger
1 egg, separated
Pinch of salt
Pinch of cream of tartar
2 Tbsp sugar
2 cups unflavored yogurt
2 medium mangos

DIRECTIONS
- Peel, pit and chop fruit.
- Puree with honey and ginger in blender or food processor.
- Bring puree to boil in small saucepan.
- Gradually whisk in beaten egg yolk, than set aside to cool.
- Beat egg whites with salt and cream of tartar until soft peaks form.
- Gradually beat in sugar until stiff peaks form.
- Stir yogurt into mango mixture then fold in egg whites.
- Spoon into a shallow metal pan and freeze until firm, stirring occasionally.
- Note: This recipe uses mango with a touch of spice.

INGREDIENTS
1 ripe honeydew melon
2 ripe bananas
2 pints ripe strawberries
1/4 cup honey or sugar
|
|
DIRECTIONS
- Peel, seed, and cut fruit into chunks.
- Put fruit and honey or sugar in blender in small batches and puree.
- Ladle the puree into Popsicle molds and freeze for at least 4 hours or until frozen.
- Puree can be frozen in plastic ice cube trays.
- Poke Popsicle sticks into place when the pops are almost frozen so that the sticks will stay upright.

Creamy Fruit Salad Recipe

INGREDIENTS
1 can (20 ounce) pineapple chunks, drained
1/2 pound grapes, seedless, red or green
2 bananas
1/4 teaspoon cinnamon
1 3/4 cups nonfat milk
1 package (3 1/2 ounce) fat-free, instant pudding mix
|
|
DIRECTIONS
- Combine fruit in a medium bowl.
- Pour milk over fruit.
- Sprinkle in the pudding mix while slowly stirring the fruit mixture.
- Let the mixture stand for 5 minutes and serve.

- Insert popsicle sticks (if desired) when mixture is slightly frozen.

Fat-Free Chocolaty Fudge Recipe

INGREDIENTS
4 cups sugar
1 tablespoon light corn syrup
1 1/2 cups non-fat milk
3/4 cup cocoa powder
1 tablespoon butter
1/4 teaspoon salt
1 1/2 teaspoons vanilla extract (variations: rum or almond extract or maple flavoring) |

DIRECTIONS
- Combine sugar, corn syrup, milk and cocoa powder in a 4-quart saucepan and heat until sugar dissolves.
- Bring to a boil over medium-high heat and boil until a soft ball forms when tested in cold water.
- Remove from heat; stir in butter, vanilla and salt.
- Cool to lukewarm temperature.
- Beat on high until mixture begins to stiffen with an electric mixer.
- Spoon into a 9 x 13 pan sprayed with cooking spray and let harden.
- Cut into squares (about 80 pieces).

Broiled Star Fruit with Vanilla Frozen Yogurt Recipe

INGREDIENTS
4 medium size star fruit, trimmed and each sliced into 8 stars
2 Tbsp fresh lemon juice
2 Tbsp light brown sugar
2 cups sugar free, fat free vanilla frozen yogurt |
DIRECTIONS
- Place a broiler rack 6 inches from source of heat; preheat the broiler.
- Arrange star fruit slices on a baking sheet and brush with lemon juice.
- Sprinkle with brown sugar.
- Broil until sugar bubbles and begins to darken for about 2 to 3 minutes.
- Scoop frozen yogurt into 4 dessert dishes.
- Top each serving with 4 star fruit slices. Serve immediately.

Frozen Peach Yogurt Recipe

INGREDIENTS
2 cups fresh or frozen unsweetened sliced peaches, thawed
1 (.25 ounce) envelope unflavored gelatin
1/4 cup cold water
1/4 cup sugar
16 ounces fat-free vanilla yogurt
|
|
DIRECTIONS
- Place the peaches in a blender or food processor; cover and process until pureed. Set aside.
- Sprinkle gelatin over cold water; let stand for 1 minute in a small saucepan. Stir in sugar.
- Cook and stir over low heat until gelatin and sugar are dissolved.
- Combine the yogurt, peach puree and gelatin mixture until blended in a bowl.
- Pour into an un-greased 9-in. square dish.
- Cover and freeze for 3-4 hours or until partially set.
- Cut into pieces and place in a mixing bowl; beat on medium speed until smooth.
- Transfer to a freezer container.
- Cover and freeze until firm, about 2 hours.

5 cups fresh or frozen unsweetened strawberries, thawed
2/3 cup sugar
2/3 cup water
1/4 cup lemon juice

DIRECTIONS
- Place the strawberries in a blender or food processor; cover and process until smooth.
- Bring sugar and water to a boil in a saucepan.
- Cook and stir until sugar is dissolved, about 5 minutes; cool slightly.
- Add to blender.
- Add lemon juice; cover and process until combined.
- Pour into a shallow freezer container; cover and freeze for 4 – 6 hours or until almost frozen.
- Just before serving, whip mixture in a blender or food processor

INGREDIENTS
1/2 cup peeled and chopped fresh peaches
1/3 cup peeled and pureed fresh peaches
2/3 cup nonfat vanilla yogurt
|

DIRECTIONS
- Puree 1/2 cup of peaches in blender or food processor until smooth.
- Lightly swirl together peach puree, yogurt and remaining 1/2 cup of peaches together in a small bowl.
- Spoon into 4 popsicle molds and insert handle.
- Freeze for at least 4 hours

Frozen Yogurt Recipe

INGREDIENTS
1 cup pureed fruit (your choice – peaches, cherries, strawberries, etc.)
1 (8 ounce) container plain fat-free yogurt
1/3 cup sugar (or you may use equivalent of sugar substitute)*
|
|
DIRECTIONS
- Blend all ingredients together until smooth.
- Chill mixture for about 1-2 hours.
- Pour chilled mixture into your ice cream machine and freeze according to manufacturer’s instructions.
- Note: the amount of sweetener depends on the sweetness of your fruit.
- Taste before freezing.
