Apple & Endive Salad Recipe

INGREDIENTS
1 large granny smith apple, cored and thinly sliced
2 – 3 tsp. of fresh lemon juice
3 cups roughly chopped Belgian endive
6 tbsp. crumbled good quality blue cheese (1 tablespoon per serving)
1/4 cup white wine vinegar
2 tbsp. lemon flavored olive oil
Fresh cracked black pepper to taste

DIRECTIONS
- Core and thinly slice apple and sprinkle with lemon juice to prevent fruit from browning.
- Toss remaining ingredients except oil together to mix. Add oil and mix again.
- Arrange fruit slices and salad on plates.
- Season this to taste with freshly ground black pepper.
