Apple and Spinach Salad Recipe

INGREDIENTS
*2 Tbsp fresh lime juice
*2 Tbsp fresh orange juice
*2 tsp Dijon mustard
*2 tsp honey
*1/4 tsp salt
*freshly ground black pepper to taste
*1/2 cup thinly sliced red onion
*8 cups fresh baby spinach (about 8 ounces)
*1 large apple, cored and thinly sliced
*1/4 cup (1 ounce) crumbled blue cheese |

DIRECTIONS
- In a small bowl, blend the juices together with mustard, honey, salt and pepper. Blend well.
- In a large bowl, place the onions and spinach. Add the dressing and toss well.
- Serve with blue cheese on top.
